#178: Unnamed Barley Wine

Brewed on October 13, 1996

Ingredients for 9 gallons:

50 pounds of Great Western 2 row pale malt
Citric acid to acidify the mash.
8 ounces of '95 Centennial, 11.3 alpha, for 90 minutes.
3 ounces of '94 Centennial, 9.0 alpha, for 45 minutes
2 ounces of '94 Cascade, 5.7 alpha, for 45 minutes
4 ounces of unknown date Mount Hood, 6.3 alpha, for 10 minutes
Irish Moss last 30 minutes of the boil
Red Star Montrechet Wine Yeast (in 5 gallons)
Whitbread Ale Yeast (in 4 gallons)

Mash: 155 degrees for 1 hour

Sparge: with 10 gallons of 180 degree water, untreated, for 90 minutes

Pre-Boil: 60 minutes, starting gravity 1.078

Boil: 90 minutes, ending gravity 1.096
