25 lb. Hugh Baird Marris Otter

25 lb. Great Western Winter Wheat Malt

1 lb. 10 oz. Corn sugar

3 oz. Perle ’97, 7.6 alpha, 90 minutes

3 oz. Centennial ’96, 10.7 alpha, 45 minutes

2 oz. Centennial ’96, 10.7 alpha, 20 minutes

White Labs Trappist Ale Yeast, 3 day starter

White Labs Alt Yeast, 3 day starter

 

Mash strike 167 in HLT, dropped to 162 in Mash Tun, 140 after dough in.  Added boiling water to raise to 150, then dropped again.  90 minutes total.

Sparge (from hell): 2 hours.

Boil: 90 minutes
