#54: Best Cellar Barley Wine
Brewed July 24, 1989, bottled September 4, 1989.
Ingredients for 5 gallons

- 20 pound of pale malt

- 3 pounds of light crystal malt

- 3 ounces Fuggles pellets, 5.0 alpha, 75 minutes

- 3 ounces Cascade pellets, 5.0 alpha, 75 minutes

- 1 ounce Cascade pellets, 5.0 alpha, 15 minutes

- 2.75 ounces Cascade pellets, dry hop

- Chico Ale Yeast

- Mash: Dough in at 100 degrees, rest 15 minutes. Add 1
gallon of boiling water to raise to 120 degrees, rest for
15 minutes. Raise to 150 degrees, rest 60 minutes. Add 1
gallon of boiling water to raise to 156 degrees, which is
when I ran out of propane.
Sparge: with 170 degree water down to 1.040.
Pre-boil: 75 minutes before first hop
addition. to reduce to about 7 gallons.
Boil: 75 minutes
O.G.: 1.090
F.G.: 1.012
Racked on 8/1 and 8/6 (dry hopped), and
8/12.
Primed with 1 cup of corn sugar and 2 cups
of lactose.
Comments: This beer failed to carbonate, so
I re-ptiched some fresh yeast in each bottle after a couple of
years.
