2 lb. Chocolate malt
1 lb. 40L crystal malt
1 lb. Wheat malt
1 tsp. Gypsum in mash water
2 oz. Oregon Fuggles, 3.5 alpha, bittering.
1 oz. Styrian Goldings, 7.0 alpha, bittering
1 oz. Mount Hood, 3.3 alpha, flavoring
1 oz. Oregon Fuggles, 3.5 alpha, flavoring
Irish moss, last 30 minutes of the boil

Single temperature infusion mash.
Strike water, 5 gallons at 180 F
Mash temperature 156, dropped to 152 after 135 minutes.

Sparge with 10 gallons at 170 F.
